Winter Nights Warm Up Stew
For us, Winter Nights is the last blót outside for months over the dark time. We start earlier in the afternoon and go until the firewood runs out because after that it is too cold to continue. It is important to have warm food for feasting! Ingredients: 2 lb. stewing beef 1 lb. bacon ends 2 tbsp oil 1/2 a bottle of red wine 1 tetra pack beef broth 1 can of crushed tomatoes 5 cloves of garlic, chopped 3 drops of truffle oil (or one onion, chopped) 1 tsp ground juniper berries 1 tsp black pepper 3 bay leaves 1 tsp thyme 1 tsp rosemary 1 tsp finely chopped dried chantrelles 4 large carrots, peeled and chopped 6 russet red potatoes, chopped 2 sweet potatoes, peeled and chopped 1/2 cup chopped portobello mushroom Cook in slow cooker all day. (Reheat in a cast iron pot over a camp stove or the fire.) If not thick enough use instant mashed potatoes to thicken. Garnish with fresh rosemary.
